POTATO LEEK SOUP

POTATO LEEK SOUP

3 lbs. potatoes

6 c. leeks (2-3 whole leeks) *

6 Tbl. butter

6 - 8 c. chicken broth

1 c. half & half

salt & pepper

Peel & cube potatoes. Wash & cut leeks (lengthwise & then sliced). Melt butter & add leeks. Saute a little & then add potatoes & broth. Bring to a boil. Reduce heat & cook till tender. Salt & pepper to taste. Add cream at the end.

* You can use onions instead of leeks, but I highly recommend you use leeks. They add another dimension of flavor that onions don't have. You can usually find them in the produce section next to all the dark green veggies. Make sure you clean them very well b/c they come to the store very dirty. The way I do it is to cut them in half length wise & then rinse them well under running water making sure to clean out all the dirt. Another way would be to cut them in half, slice them, put them in a colander & rinse them very well. It's not as hard as it sounds. :o)
