CHOPS GONE FRUITY
- 4-6 Boneless Pork Chops
- 1 Cup Dried Cranberries
- 1 Cup Dried Apricots
- 1/4 Cup Sugar
- ~ 1/4 Oil
- Water
- Salt and Pepper
- In a Large Skillet, heat on med-high heat enough oil to coat the bottom of the pan.
- Salt and Pepper Chops and Sear in Skillet until Browned on Each Side.
- Reduce Heat and Take Off Pan.
- Remove Chops.
- Stir in Chopped Apricots and Cranberries with Sugar in Pan along with ~ 1/2 cup water.
- Replace chops and return to heat.
- Simmer covered for 45 minutes. Replace water if needed and stir occasionally.
