Pork Chops gone Fruity

CHOPS GONE FRUITY

  • 4-6 Boneless Pork Chops
  • 1 Cup Dried Cranberries
  • 1 Cup Dried Apricots
  • 1/4 Cup Sugar
  • ~ 1/4 Oil
  • Water
  • Salt and Pepper
  1. In a Large Skillet, heat on med-high heat enough oil to coat the bottom of the pan.
  2. Salt and Pepper Chops and Sear in Skillet until Browned on Each Side.
  3. Reduce Heat and Take Off Pan.
  4. Remove Chops.
  5. Stir in Chopped Apricots and Cranberries with Sugar in Pan along with ~ 1/2 cup water.
  6. Replace chops and return to heat.
  7. Simmer covered for 45 minutes. Replace water if needed and stir occasionally.
