Tortilla Soup

Tortilla Soup

1 med. onion, chopped

2 cloves of garlic, chopped

2 tbs. oil

3 (10.5) cans of beef broth

3 (10.5) cans of chicken broth

3/4 cup tomato juice

2 tsp. ground cumin

2 tsp. chili powder

1 tsp. salt

1 1/2 tsp. worcestershire sauce

2 cups of cooked chicken (season while cooking)

2 cans of hominy

2 large tomatoes peeled and diced

Corn tortillas, fried crisp and cut in strips

Grated cheddar cheese

Saute onion and garlic in oil. Add beef and chicken broth, tomato juice, cumin, chili powder, salt, and worcestershire sauce. Bring to a full boil. Cover and simmer for 30 minutes. Add chicken, hominy, and tomatoes. Simmer for another 30 minutes and then serve. Place tortilla stripes on top and garnish with cheese.

Wanted to add, you can add more spices, chicken, hominy, or tomatoes to your liking. I have made this so much that I add ingredients to my taste. More chili powder the spicier it will be. Good luck and hope you really enjoy it!!
