Seafood Stuffed Bellpeppers

Seafood Stuffed Bell Peppers

6 md green bell peppers, or 4 md-lg
1ts salt, divided
8oz shrimp, steamed and peeled
8oz crab meat, flaked
1 cup cooked rice
2tbs chopped pimento(I skipped)
1/2c finely chopped celerey
1/2c finaly chopped onion
3/4c mayonaise
1tsp seafood seasoning blend
pepper to taste
1/2c dry bread crumbs
2tbs butter or margarine

Preheat oven to 350*. Cut the tops off of the peppers and discard the seeds and membranes. Combine the green peppers and 1/2tsp salt with enough water to cover in a 4qt saucepan. Bring to a boil. Boil for 5 mins, drain. Combine the shrimp, crab meat, rice, pimento, celery, and onin in a md mixing bowl and mix well. Stir in a mixture of the mayo, seafood seasoning, remaining salt and pepper. Spoon the mixture in the peppers. Sprinkle with the bread crumbs and dot with butter. Arrange the peppers in a 1 1/2 qt baking dish.(I had to use a 2qt for 4 peppers). Add enough water to have 1/2in in the dish. Bake for 30 mins or until heated through.
