Quick and Easy Gumbo

Quick and Easy Gumbo

Ingredients:
Medium onion
6 slices bacon
1 package frozen okra (or about 1 1/2 cups fresh okra)
1 can crushed tomatoes
Worcestershire Sauce
Salt/pepper

Optional:
shrimp
chicken
beef cubes

In a medium sized skillet cook 6 slices of bacon. Remove when cooked, do NOT drain grease.
Saute chopped onion in bacon grease until clear.
Add can of chopped tomotoes, okra, and about 2-3 dashes of Worcestershire Sauce.
Stir occasionally and allow to simmer, covered, while rice cooks on the side, about 20 minutes. Add salt and pepper to taste.
When hot (sometimes bubbling around the sides) ladel on to bed of rice.

Optional:
You can add shrimp, chicken, beef cubes if you'd like. Saute those (we prefer in garlic and butter) before starting the gumbo. Add when chopped tomatoes are added.
