Chicken Scampi

CHICKEN SCAMPI

Finely chop 10-12 garlic cloves and handful of fresh basil. Sauté with 1 stick of butter for 15 minutes. Add 1 cup of white cooking wine, juice from 1 lemon (without the seeds ), and 3/4 can of chicken broth (add the chicken broth a little at a time because you might not need it all). Simmer for ½ hour.

Cook 1 lb. of penne. It usually takes about 10 minutes to cook.

Cut chicken breasts (1 per person) into bites. Cut grape tomatoes in ½ (if you want, depends on how you like them). Sauté chicken bits in a little oil until they’re almost done (a little pink). Add chicken and tomatoes to sauce. Cook for 1 minute. SHUT OFF.

** you only want to cook the chick/toms real quick in the sauce. You should throw them in when you're almost ready to serve – the chicken should be almost cooked when you throw it in **

Let it cool for about 10 minutes. Add penne and 1 heaping serving spoon of sour cream (or 1 sm. container) (sour cream is optional. I made it both ways and you liked it both – you probably didn’t even notice the difference!!)

Sprinkle a handful of parmesan cheese in the scampi and mix. Then sprinkle more on top when it’s served.

Clam Linguine

8-12 oz pasta { linguine}

2 TBS minced Garlic

2 TBS olive Oil

2 TBS flour

1 TSP Corn starch

1 TSP Garlic salt

1/2 tsp black pepper

1/4 tsp dried basil flakes

1 1/2 cup milk { can not be SOY}

1/2 cup grated parmesan cheese

1/2 cup canned clams { drain the juice, but do not rinse}

1 block of cream cheese

Ok here are the directions:

Take following ingredients and cook

Basil, clams, minced garlic, garlic salt, olive oil, cook all of these together for about 3 minutes on high,

once all is cooked remove ingredients into a bowl off to the side.

next add your milk, and cream cheese. Once cream cheese is melted into milk add you grated parmesan. use a whisk to blend it all together. once its all mixed well, add the stuff you cooked before. mix it all up well. Cook this on high and bring to a boil. Then slowly add either cornstarch, or flour { for thickening, its your preference, I like cornstarch}Do not add the full amount of flour/cornstarch. Just do it slowly to avoid lumps. once you get desired consistency your ready to eat it. So in the mean time have your pasta cooking. If the sauce gets too thick you can always add more milk. I serve it over my pasta usually with garlic bread and salad. Sometimes a Caesar salad.

Spaghetti Parmesan

Spaghetti Parmesan

12 oz spaghetti

1 lb ground beef/turkey

1 jar spaghetti sauce

½ cp parmesan cheese

2 cps Italian cheese mix

Cook spaghetti according to package directions. While that is cooking, brown ground beef. Add spaghetti sauce to ground beef and warm through. Pour spaghetti into a greased 9 x 3 baking dish. Sprinkle ¼ cp parmesan cheese over noodles. Pour meat sauce over noodles. Sprinkle the rest of the parmesan cheese over the top. Mix sauce into noodles. Top with Italian cheese. Cook at 375 for 25 minutes or until cheese is lightly browned.

**Note: This is super easy and soooo good (asked for in my house). Also, you can kick this up a notch by:

1) Add to ground beef while browning: ½ chopped onion and 1 clove garlic, chopped.

2) Add whatever you choose to the sauce, like mushrooms, green pepper, etc.

3) I usually use 3 cups Italian cheese so it’s extra cheesy.

Mini Meatball and Broken Spaghetti Tomato Stoup

Mini Meatball and Broken Spaghetti Tomato Stoup

Rachael Ray
From Every Day with Rachael Ray
November 2006

FOUR SERVINGS

2 tablespoons extra-virgin olive oil (EVOO)
1 onion, chopped
2 carrots, chopped
3 cloves garlic, chopped
1 fresh or dried bay leaf
1 quart chicken broth
One 28-ounce can crushed tomatoes
One 15-ounce can tomato sauce
3/4 pound ground beef sirloin
Flat-leaf parsley, finely chopped (a generous handful)
1 large egg
1/4 to 1/3 cup fine Italian bread crumbs
1/4 cup freshly grated Parmigiano-Reggiano cheese (a generous handful), plus more to pass around the table
Salt and freshly ground pepper
1/2 pound spaghetti, broken into thirds
1 cup fresh basil leaves, shredded

1. In a large soup pot, combine the EVOO, 2 turns of the pan, the onion, carrots, garlic and bay leaf and cook over medium-high heat for 5 minutes. Add the chicken broth, crushed tomatoes and tomato sauce, cover and bring to a boil over medium-high heat.

2. In a large bowl, using a fork, combine the ground beef, parsley, egg, bread crumbs and 1/4 cup cheese; season with salt and pepper. Roll the meat into balls the size of a large walnut and drop each one into the soup pot (you should have about 16 meatballs). Simmer the stoup for 10 minutes.

3. Stir the broken spaghetti into the pot and cook, stirring occasionally, until al dente, about 12 minutes. Turn off the heat, stir in the basil and season the stoup with salt and pepper to taste. Serve, passing more cheese around the table.

Spinach Lasagna

18-20 oz of swiss and mozzarella cheese
2 # ground meat
2 envelope of spaghetti mix
2 T dehydrated onions
1 t salt
1 t garlic salt
2 14 oz can of Italian stewed tomatoes
1 8 oz can tomato sauce
1 pkg frozen spinach (thawed and drained , make sure to squeeze out all the moisture)
3 large eggs well beaten
1 # container of small curd cottage cheese
1/2 c of grated parmesan
lasagna noodles

Brown meat with onions and salts, drain. Drain tomatoes really well and add to meat. Add sauce, and packages of spaghetti mix ( add mix only, don't follow package directions). Mix mozzarella and swiss cheese in a bowl together. Add eggs, cottage cheese, parmesan and spinach together in a bowl.

Layer meat, shredded cheese, cottage cheese , and noodles.
If you feel like boiling noodles feel free but trust me it ain't worth the extra work. Use regular lasagna noodles it works great

Bake covered at 350 for 30 minutes if noodles are boiled and 60 minutes if not boiled. Uncover for last 15 minutes to brown cheese. Let sit for 20 -25 minutes before cutting. A really hearty lasagna that serves a bunch!!!

PS. you really dont even taste the spinach, but for those who dont wanna try it, i have made it plenty of times w/o the spinach. Nothing changes in recipe.

    12 green onions

    3 yellow squash

    1 red bell pepper

    1 Tbsp minced garlic

    ¼ cup creamy peanut butter

    • Cook pasta, drain and keep warm.
    • Cut white portion of onions into 2 inch pieces; reserve green tops for another use. Cut squash in half lengthwise, and cut halves into slices. Remove and discard seeds from bell pepper, and cut pepper into thin strips.
    • Cook vegetables in a sauce pan in boiling water to cover 3 minutes; drain veggies and set aside.
    • Pour oil into a large skillet; place over medium heat until hot. Add garlic, and cook, stirring constantly 1 minute. Add peanut butter, stirring until smooth. Stir in soy sauce and next 3 ingredients.
