Chile Relleno Casserole...

4 eggs
1 1/2 cups whole milk
2 tablespoons all purpose flour
1/2 teaspoon pepper (per your taste)
1/4 teaspoon salt (per your taste)
3 7-ounce cans whole green chilies, split open
4 cups shredded cheddar cheese
4 cups shredded Monterey Jack cheese ( just get a bag of chedder/jack mixed shredded cheese and add to my own taste)

This serves all of us, so I figure this is enough for 6-8 servings. Freezes well too!

Assorted garnishes such as chopped tomatoes and cilantro, sliced green onions and avocados, or salsa of your choice
Spray a 9x13-inch glass baking dish with non-stick cooking spray. Beat first 5 ingredients in a medium bowl to blend. Arrange chiles from 1 can in prepared dish, covering bottom completely. Sprinkle with 1/3 of each cheese. Repeat layering twice. Pour egg mixture over cheese and let stand 30 minutes. (Can be prepared 1 day ahead. Cover dish and refrigerate.)

Preheat oven to 350 degrees. Bake until casserole is slightly puffed in center and golden brown on edges, about 45 minutes. Cool 20 minutes. Cut into squares and serve with assorted garnishes sprinkled on top.

I usually roast 5 or 6 chiles instead of using canned. Peel, stem and seed them, then split open and proceed. Talk about stinging hands, lol

Chicken Baked in Honey

1/8 cup Honey

1/8 cup prepared mustard (I like dijon, but it's up to you & what your taste preferance is)

1/2 tbsp lemon juice

6 pieces frying chicken (I use boneless/skinless breasts)

Preheat oven to 350 degrees. Combine honey, mustard and lemon juice. Butter a bottom of a 9x9" casserole dish...I will spray with "Pam" first though, so nothing sticks :0), Add chicken. Season with salt, pepper, a dash of garlic powder, & onion powder (per your tastes of course). Top with honey mixture. Bake for 30 minutes. Turn and bake for another 30min's more. I like to serve with white rice or egg noodles and a side salad or veggie.

Onion Garlic Chicken

Onion Garlic Chicken

Boneless & skinless chicken breasts

1 large onion or 2 med onions

garlic powder, Mrs. Dash, Pepper, and butter.

Pam or any non stick cooking spray.

Spray a casserole dish w/Pam or non stick cooking spray. Peel then cut onion into rings and lay on bottom of casserole dish, cut as many onions for your taste. Lay boneless/skinless chicken breasts on top of onions. Sprinkle breasts w/garlic powder, Mrs Dash (I tend to be generous with this one), pepper. Put pats of butter on top of each breast and a bit in the casserole dish (the amount is all dependant on your taste)

Place casserole dish in oven at 325 degrees for 1 hour and 5mins. Serve with rice, noodles, or veggies.

This recipe is one of my families favorite dinner dishes. The onions tend to caramelize and the juices run w/the butter, it's rather tasty :0). Hope your family likes it as well.
